Cocoa Wasabi Biscuits
300g self-raising flour 30g cocoa powder 250g soft unsalted butter 125g caster sugar 1 tea spoon wasabi sauce Preheat the oven to 170C. Cream the butter and sugar, work in the sifted flour and cocoa, finally add in the wasabi sauce.  Or just put everything but the wasabi into a blender, mix, add in the wasabi and mix a little more. They’ll spread quite a lot in the oven so leave some...

Cheesey Almondy Leek Cannelloni
Finely chop three Leeks and boil in vegetable stock for three minutes. Meanwhile make a regular cheese sauce but use a mix of almond milk and cow milk. Stuff the cannelloni with the boiled and drained leek. Pour the cheese sauce over the top. Grate lots of extra cheese and a few breadcrumbs over the top. Bake for a little under 30 minutes at 220 C

Cheesey Leeky Pasta
Sweat a finely chopped leek in some groundnut oil with a smidgen of nutmeg grated over the top Cook some pasta Drain the pasta then toss in olive oil, add the leek, lots and lots of cheese and mix Serve Don’t use wholewheat pasta, it overpowers the very subtle taste of the rest of the ingredients.  Adding chopped jalapeno peppers at the end perks it up a lot, but makes any subsequent...

Addictive Mac and Cheese - Bitten Blog -... →
This recipe will take longer than a simple macaroni cheese recipe, but is very definitely worth it.  Do not skimp or cheat on anything, this really is worth following to the letter.

You don’t have to follow this recipe exactly, simply use it as inspiration. I make this slightly differently each time, and it’s always delicious.

I couldn’t get these to rise as much as they should, but they were still rather tasty.

Orange, Strawberry and Amaretti Cheesecake
Source: Me Chocolate digestive biscuits 1 tub mascarpone cheese 2 tubs cream cheese Sugar (lots) 1 orange Amaretti biscuits Butter Orange juice Strawberries Actually, this would work better with plain digestive biscuits, the chocolate overwhelms the delicate flavours of everything else. We only had chocolate digestives in stock though, and they needed using up. A fruit sauce or compote...

Sponge Cake
Source: Recipezaar 3 Eggs 1 Cup sugar 1/2 Cup cold water 1 1/4 Cups flour 1/4 teaspoon baking powder I cooked this in a kitchen with very limited equipment, and didn’t have a whisk or mixer available for step 5 so the batter was a little lumpy - this didn’t seem to matter (it just didn’t rise quite as much as I’d have liked) and the end-product was loved. As a...

Crumpets
Source: Delia Smith 8 oz (225 g) strong plain flour 1 level teaspoon salt 1 level tablespoon dried yeast 1 level teaspoon caster sugar ½ pint (275 ml) milk These really do need leaving a long time to raise, don’t be afraid to leave them longer than the instructions state. Also don’t be afraid to over-cook them, it’s important the bubbles raise and burst to get the...

Scones
8 ounce Self-rising flour; sifted 1½ ounce Butter; at room temperature 5 ounce Milk; skim 1½ tablespoon Sugar 1 Pinches salt It’s important that the dough is really well formed, and at least 2cm thick. They don’t rise as much as you would expect, and come out strange shapes if not formed evenly. The recipe suggests they make 12, but I only got 9 out of this. Preheat oven...

Shortbread
125g/4oz butter 55g/2oz caster sugar 180g/6oz plain flour You might need some milk if the mixture fails to form properly. Heat the oven to 190C/375F/Gas 5. Beat the butter and the sugar together until pale. Stir in the flour to get a smooth paste. Turn on to a work surface and gently roll out until the paste is 1cm/½in thick. Cut into rounds or fingers and sprinkle with a little extra...

Spicy Orange Compote
3 Oranges 150g Sugar 150ml Water 1/2 Cinnamon stick Other spices as available Dissolve the sugar in the water over a low heat Add the cinnamon stick and other spices Boil for 2 minutes, remove from the heat and set aside Remove the peel and white pith from the oranges using a serrated knife (don’t just peel). Work over a large plate to retain any juice that is lost. Slice the...

Apple Crumble
Filling: 900g Bramley apples 25g Brown sugar 1 tsp cinnamon 75g raisins Our taste-testers agreed that 1tsp was far too much cinnamon. It tasted absolutely delicious, but certainly wasn’t a plain apple crumble as requested. Slice the apples thinly Mix the brown sugar and cinnamon in with the apples Cook over a low heat until soft Topping: 110g oats 110g flour 75g butter 110g...

Custard
Couple drops vanilla extract 275ml whipping cream 3 large egg yolks 25g caster sugar The addition of 1tsp cornflour reduces the chances of making lumpy custard, but if you are careful enough you don’t need it. Heat the cream in a saucepan over a low heat. It’s important to use a thick-bottomed pan for this recipe Whilst the cream is heating, whisk the egg yolks with the sugar...

Tansy's Pumpkin And Apple
250g diced pumpkin 650g thinly sliced eating apples 40g caster sugar 1/4 cup white wine 1/8 cup water It’s important not to overcook this, the fruit needs to remain recognisable and not a stewed mix. It works well with ice-cream and/or crumble - makes enough to be used with the crumble toppings of previous recipes. Quantities for the liquids are a guess. Put everything into a large...

Sticky Toffee Pudding
Sauce: Melt half a normal sized tub of margarine on a low heat. Add one tub (same size as first) of sugar and boil for 5 mins. It sould be runny. Add 250ml soya milk, one cap of vanilla and a pinch of salt. Cake: Pour this sauce over 4 tubs of dates and leave to soak for at least 10 mins - the longer the better. Mix together half tablespoon baking powder, one tub gram flour, one tub light...

Squash Soup
Most of my soups aren’t actually soups, they turn out far too thick. This doesn’t matter in the slightest, just don’t tell people what you are cooking until it is ready to serve. Sweat 1 finely chopped onion and 2 garlic cloves for 7 minutes Add 2 large carrots (diced) and 1 medium butternut squash (peeled and de-seeded) Cook for 7 minutes Add 1 red chili and 1.2 litres of...

Roast Squash
Peel, de-seed and cut a butternut squash into chunks Place on baking tray, add lots of rosemary, 6-8 squashed garlic cloves, lots of dried chili flakes and lots of sunflower oil. Toss well Cook in pre-heated oven at 190C for 40 minutes, tossing again half-way through Don’t be afraid to leave in a little longer if you think it needs it Pour the juice of half a lemon and a good amount of...
